How to Make Delicious Roasted Greek Potatoes

Potato or “Pa-tato”, who cares how you say it, what matters…is how you cook it! This recipe will be a great side dish that can make any dish come to life. So if you would like to do this the right way…reach for your Tatergator and then follow the steps below.

 

5 lbs. russet potatoes (Maris Piper if in the UK)

Sauce for roasting

1 cup water
3/4 cup olive oil
5 sliced or chopped garlic cloves
3 tsp semolina flour
1 tbsp. kosher salt
2 tsp. fresh ground pepper
1/2 cup fresh chopped oregano
2 lemons juiced

Preheat your oven to 400 F

Get out your Tatergator and ”peel away” the 5 lbs of potatoes!

Cut the potatoes length wise in wedges, about 6 to 7 per potato. Wash and place the potatoes in a large metal roasting pan. Wisk together the remaining ingredients and pour this mixture into the pan and coat evenly. Roast for 40 minutes to one hour.

Turn potatoes now and then to brown all edges until crispy. The semolina flour helps to create the crispiness because this is what pasta is made from. Feel free to sprinkle more as they are roasting. Garnish with more fresh oregano if you have it!

Serve with any barbeque, roast chicken or roast lamb and then say YUM!
